Steak Salad with Goat Cheese and Strawberries

With spring on the horizon, I start thinking about salad. This one is part of our warm-weather repertoire if we are feeling a little indulgent. Steak is expensive these days, y'all!



Ingredients 2 ribeye steaks, 6 oz each 1 head of butter lettuce, rinsed, dried, and chopped 1.5 cups Strawberries, greens removed and quartered 10 asparagus stalks, cut into 1/2 inch pieces 4 oz goat cheese, crumbled 1/2 cup French-fried onions 1/4 cup fresh basil, shredded

1 tbs butter 1 tbs evoo Balsamic glaze (I'm partial to Trader Joe's) 1 recipe steak seasoning 1 recipe Balsamic Dressing Steak Seasoning 1 tbs fresh rosemary, minced 2 tsp paprika 2 tsp garlic powder 1/2 tbs salt

1/4 tbs pepper Balsamic Dressing 1/4 cup balsamic vinegar 1 tbs honey 1 tbs Dijon mustard 2 cloves garlic, grated 3/4 cup evoo

Instructions


  1. Prep your ingredients.

  2. Make your vinaigrette. In a jar, combine balsamic vinegar, honey, mustard, garlic, evoo, and salt and pepper to taste. Shake to combine and set aside.

  3. Make your steak seasoning. In a small bowl, combine fresh rosemary, garlic powder, salt, and pepper.

  4. Season both sides of the steak generously and let it sit at room temperature for 5- 10 minutes.

  5. Bring 2 cups of water to a boil. Once the water is rolling, blanch your asparagus for 1-2 minutes, then strain and transfer to an ice water bath to stop it from continuing to cook. Set aside.

  6. Heat a cast iron skillet over medium-high heat, allow the skillet to get hot for a minute or two, then reduce the heat to medium and add 1 Tbs EVOO and 1 tsp butter; melt and combine.

  7. Add the steaks to a hot cast-iron skillet and cook for 4 minutes per side for medium-medium rare. Remove the steaks onto a plate and tent with foil for 5 minutes.

  8. Assemble your salad by adding blanched asparagus, quartered strawberries, and half of the crumbled goat cheese to your butter lettuce, then toss with balsamic vinaigrette.

  9. Plate salads onto entree plates before moving on to the next step.

  10. Slice the steak into strips and place it on top of the salad mixture.

  11. Garnish salad with more goat cheese crumbles, fried onions, shredded basil, another splash of vinegar, and a drizzle of balsamic glaze.

Total Cook Time: 45 minutes Makes 2 -3 Servings
